Ube ice cream, come to mama!!! I've been searching for the perfect ube ice cream recipe but all of them just used the standard vanilla base, and I didn't want to bother with a true custard base with eggs. I used all coconut milk for the halaya, then added macapuno strings at the last 5 minutes of churning the ice cream to amp up that ube-macapuno combo I'm so addicted to. Good thing my ice cream maker only makes 1 1/2 quarts at a time or I'd have to buy a bigger bikini this summer!
